So, Costco fans were exceptionally happy to hear of the return of Costco’s beloved chicken pot pie, which is officially back in stores, and just in time for fall. Plus, because this is a big-box store we're talking about, this pie is huge. It’s ideal for entertaining and feeding a crowd throughout the season—for holiday gatherings, potluck dinners, and even just for basic meal-prepping at home since one pie yields several servings that’ll last a while.
Costco’s Chicken Pot Pie Is Back in Stores
Word got out about the return of Costco’s ready-to-bake chicken pot pie after it was spotted by Instagram user Laura Lamb, aka Costcohotfinds, who posted an image of it on the shelves along with a video and cooking demo, where she offered tips, and her favorite “go-to” hacks for how best to prepare it at home for maximum deliciousness.
Her caption also addresses its impressive size: “5.5lbs...There’s 1.5lbs of chicken alone in this pot pie!!” Lamb's cooking demo/tutorial offers tips, such as painting on an egg wash layer of water and egg yolk prior to baking to enhance the crust’s texture and golden brown hue. She also suggested taking the pie out of the oven to add a layer of foil to top the crust (after about 50 minutes), before then letting it cook for the full 90 minutes at 375 degrees F. This way the crust won't burn and the whole pie will bake fully to perfection.
One Instagram user who commented on Lamb's post suggested making extra gravy at home for added moisture. So, if you find it to be a bit dry, or you simply just love gravy, make a big batch and use it as liberally as you like. Pick up the Loaded Mashed Potatoes to serve alongside while you're there, too.
The pie costs around $22.00, or $3.99 a pound, which makes it a great option for big gatherings and entertaining needs this fall. If you aren’t going to eat the whole thing at once, you can also cut into portions and freeze, as it’ll keep for longer and be individually portioned for later use.
As Lamb says in her love letter post, "You know it's almost fall when Costco brings back the chicken pot pie...I swear this is the best pot pie, it never gets old."
