After sharing Gluten Free Chocolate Cookies last month, I’ve been inspired to come up with another cookie recipe for you that’s low carb, gluten free and better than carb full cookies.

These Easy No Bake Peanut Butter Cookies are just that – they are the easiest cookies to prepare, are wonderfully nutritious and peanut butter fans will LOVE them.

My whole family adore these – each batch doesn’t last long in my house and it’s great knowing the ingredients are wholesome and the cookies are a perfect source of protein too.

The no bake cookie recipe is the perfect treat that’s similar to no bake oatmeal cookies, but with only a handful of simple ingredients and without any kind of oats – be that quick oats or old-fashioned oats.

The great thing is that these are perfect to make and enjoy all year around – whether that’s as Festive peanut butter treats or on hot summer days when you crave homemade cookies but don’t want to heat your oven or kitchen.

How To Make No Bake Cookies

To make the excellent recipecouldn’t be simpler – you start by mixing the nuts and coconut together in a large bowl.

I usually use flaked almonds to create the perfect cookie texture, along with fine desiccated or shredded coconut for balance.

Then, melt the natural peanut butter, butter and stevia together until you have a smooth, creamy, buttery mixture.

You can swap the stevia in the sugar mixture for any sugar or sweetener alternative you usually include in no bake recipes such as maple syrup or an alternative.

Once the peanut butter and butter have melted together, pour the creamy peanut butter mixture over the nuts and coconut and then mix until you have a cookie dough.

Prepare a baking tray or cookie sheetwith well greased baking paper or wax paper and then drop mixture onto the tray at a tablespoon per cookie.

Then, it’s just a matter of patience – waiting a couple of hours for the cookies to harden in the fridge and you’ll be able to enjoy perfect no bake peanut butter cookies.

Once the no bake treats have set, place cookies inan airtight container or freezer bag and store in the fridge to grab whenever you’re craving a sweet treat through the week.

There are number of different options for other ingredients that you can mix into your easy recipe for a chocolate version or easy cookies with mixed nuts:

Cocoa Powder – add a few teaspoons of unsweetened cocoa powder or cacao powderfor no bake chocolate peanut butter cookies.

Nuts – add in other chopped nuts like hazelnuts, walnuts or even luxurious macadamia nuts.

Seeds – add in pumpkin, sunflower or chia seeds for a nut and seed cookies.

Nut Butters – go for almond butter, cashew butter, sunflower seed butter, hazelnut butter or any other nut butter you like.

  • 50g/1.76 ounces Unsalted Butter or 1/4 Cup Coconut Oil For Dairy Free/Paleo/Vegan Cookies
  1. Line a baking tray with well greased baking parchment paper.
  2. In a large bowl, combine together the almonds and coconut.
  3. Place the peanut butter, stevia and butter or coconut oil in a small saucepan over medium heat.
  4. Heat until the butter has melted and you have a smooth, creamy, buttery sauce.
  5. Pour the peanut butter mixture over the almond mixture and stir until well combined.
  6. Drop a tablespoon per cookie onto the prepared baking tray.
  7. Place into the fridge for a few hours for the cookies to set and harden.
