What started as a simple food truck in Austin, Texas has exploded into over 110 locations in 14 states. I’m talking about Torchy’s. If you’ve tried their tacos or queso, you’re one of the lucky ones. Intense, fresh flavors, and interesting ingredients are constants on the menu.

About the queso.. it’s creamy, spicy, and richly flavorful. It makes the perfect appetizer or even meal. If you’re looking to make it at home, maybe you don’t live near a Torchy’s (I’m sorry), this is your recipe. Classic Velveeta combines with salsa verde, green chiles, and Valentina hot sauce to make the queso nice and spicy. The best part, the chunks of avocado, cools the whole thing down perfectly. This flavor bomb is available in your kitchen, what you are waiting for?!

Ingredients in Torchy’s Queso

  • Velveeta – Torchy’s uses Land O Lakes Easy Melt in their recipe, but this product is only available to those with a restaurant license and Velveeta is the next closest option.
  • Salsa Verde
  • Green Chiles
  • Valentina Hot Sauce
  • Heavy Cream
  • Cilantro
  • Guacamole
  • Cotija Cheese

Variations

  • Try making fresh guacamole and dropping a big spoonful in instead of the chunks of avocado. This is an option at the restaurant and it tastes delicious!
  • Add fresh lime juice for a zing, there can never be too much lime!

Ideas for Serving

  • Doritos (for extra flavor)

  • Drizzle on burritos
  • Try it with chicken wings
  • Pour over potatoes (like fries or oven roasted)

Recipe Tip

If your queso is a little on the thin side, add a little bit of shredded cheese like mild cheddar or Monterey Jack.

Frequently Asked Questions

Is Torchy’s queso spicy?

It’s as spicy as you want it to be! If you are ordering it at the restaurant, you can ask for no diablo sauce (that’s what gives it spice) or extra! If you are making it at home, modify the amount of hot sauce, salsa, and chiles you put in there.

What is Diablo Sauce made of?

This famous sauce is a combination of habaneros, green bell pepper, tomato, onion, white wine vinegar, and a few spices. In the at-home version we use Valentina hot sauce.

Where can I buy Torchy’s queso?

If you are lucky and have a location near you, you can buy it at the restaurant. If not, recently, Whole Foods has started selling a jarred version of the queso.
